
Banbury Tart
Ingredients
Filling
- 1 egg (beaten light)
- 1 cup raisins
- 1 cup sugar
- 1 tbsp flour
- juice of one lemon and grated rind
Shell
- 1 cup flour
- 2 tbsp lard
- cold water
Instructions
Filling
- Mix well and cook to consistency of custard, and fill the pastry which is turned up and made into the shape of a tart.
Shell
- Handle as little as possible; roll thin and cut with cutter 6 inches in diameter.
