
Quick Coffee Cakes
Ingredients
- ¼ cup butter
- ¾ cups sugar
- 1 egg
- 1 cup milk
- 2 ½ cups flour
- 2 tsp baking powder
- raisins to taste
- cinnamon
Instructions
- Cream one-fourth of a cupful of butter, three-fourths of a cupful of sugar, one egg; add one cupful of milk, two and one-half cupfuls of flour in which two teaspoons of baking powder have been sifted. Beat smooth, then add as many raisins as desired and bake in two pie tins.
- When the top has begun to crust over, brush with melted butter and sprinkle with sugar and cinnamon. Bake a golden brown.
